When you save a profile a file is created with the same name and the .prfl extension. In Windows 10 look for it here (replace 'USERNAME' with windows user name';

C:\Users\USERNAME\ExpertSDR2\profiles

I found the Profile file in Windows 7 with no problem & also how to save a Profile in the drop down menu next to the Options Tab. But there is no explanation of Profiles in the Expertsdr2 manual.
if I save a Profile, does it copy all the settings & parameters currently being used eg. all the Options settings etc?

No, will be saved not all options settings - will be saved all main settings of the transmitter, RX settings and some other. I will ask programmer about full list of the functions which can be saved into profile.
