Finally found out how to setup SSB TX with MIC inserted into E-coder2 MIC receptacle jack.
The MIC has to be enabled at Main display window location Mic drop down menu: E-coder 2
Of course I missed that and was trying to make the setup only via Cog wheel Mic profiles where there is a E-coder2 mic setting as well.
